Stuffed Zucchini
4 large zucchini sliced in half
2 cups spinach
garlic chopped
1 tomato sliced
3 cups mushrooms chopped finely
salt/pepper
Cut zucchini in half and scrap the inside out into a pan with butter. Cook the inside of the zucchini with the spinach, garlic, tomato, and mushrooms until done. Remove from heat and place zucchini halves on a cooking sheet and fill them with the mixture. Place them in the oven on 350 degrees and cook until the zucchini halves are soft. Serve.
